CSV output: the character between values

Encoding

CSV/TSV output encoding; 'utf-8-bom' makes Excel read accents correctly

Protect against formula injectionCSV/TSV output: prefix text starting with = + - @ with an apostrophe, so a spreadsheet never runs it as a formula

Workbooks: empty for the first visible sheet, 'all' for every visible sheet, or sheet names or numbers separated by commas
